How to Make Savory Roast Beef
  1. Preheat your oven to 450°F (232°C) to create a hot environment for the roast.
  2. Generously season your chuck or ribeye roast with kosher salt, freshly cracked black pepper, and garlic powder.
  3. In a skillet over medium-high heat, heat olive oil until shimmering. Sear the roast on all sides until golden-brown, about 3-4 minutes per side.
  4. In a baking dish, arrange your chopped root vegetables around the roast. Drizzle with olive oil and sprinkle with salt and pepper.
  5. Place the baking dish in the oven and roast at 450°F for 20 minutes. Then reduce the temperature to 325°F (163°C) and continue roasting for approximately 1 hour.
  6. Once cooked, remove the roast from the oven and let it rest for at least 15 minutes before slicing.
