  • 4 pieces Boneless, skinless chicken breasts
  • 1 cup Long-grain white rice
  • 2 cups Low-sodium chicken broth
  • 1 can Cream of mushroom soup
  • 1 cup Sour cream
  • 1 cup Fresh vegetables (peas and carrots)
  • 1 cup Shredded sharp cheddar cheese
  • to taste Salt
  • to taste Pepper
  • 1 teaspoon Garlic powder

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C). Lightly grease a large baking dish with cooking spray.
  2. Season the chicken breasts with salt, pepper, and garlic powder. Sear them in a hot skillet for about 3-4 minutes on each side.
  3. Mix together rice, chicken broth, cream of mushroom soup, sour cream, and fresh vegetables in a large mixing bowl.
  4. Layer half of the rice mixture in the greased baking dish. Place the seared chicken breasts on top and cover with the remaining rice mixture.
  5. Sprinkle the shredded cheddar cheese generously over the top layer.
  6. Cover the dish with aluminum foil and bake for 45 minutes. Remove the foil, then continue baking for an additional 15 minutes.
  7. Let it sit for 10 minutes to set before serving.
