Preparation Steps
- Preheat your oven to 350°F (175°C). Lightly grease a large baking dish with cooking spray.
- Season the chicken breasts with salt, pepper, and garlic powder. Sear them in a hot skillet for about 3-4 minutes on each side.
- Mix together rice, chicken broth, cream of mushroom soup, sour cream, and fresh vegetables in a large mixing bowl.
- Layer half of the rice mixture in the greased baking dish. Place the seared chicken breasts on top and cover with the remaining rice mixture.
- Sprinkle the shredded cheddar cheese generously over the top layer.
- Cover the dish with aluminum foil and bake for 45 minutes. Remove the foil, then continue baking for an additional 15 minutes.
- Let it sit for 10 minutes to set before serving.
