- Start by chopping the onion and carrots into even pieces. Mince the garlic cloves finely to ensure they flavor the dish beautifully.
- For added depth of flavor, sear the chuck roast in a skillet over medium-high heat. Brown it for about 3-4 minutes on all sides until a nice crust forms—this step is optional but highly recommended!
- Place the seared roast (or raw if you skipped the searing) into the crock pot and layer it with the sliced onions, carrots, and minced garlic. Make sure everything is spread out evenly.
- Pour in the low-sodium beef broth and Worcestershire sauce. Generously season everything with salt, pepper, and fresh thyme for a rich, aromatic flavor.
