  • 3/4 cup Unsalted butter softened
  • 1 cup Molasses (unsulfured)
  • 2 large Large eggs
For Decorating (Optional)
  • 1 cup Royal icing
  • 1 cup Sprinkles or colored sugar
  • Candy pieces for embellishing

Method
 

Directions
  1. Preheat your oven to 350°F (175°C).
  2. Whisk together the flour, baking soda, ground ginger, and ground cinnamon in a bowl.
  3. Cream the softened butter and brown sugar until fluffy.
  4. Mix in the molasses and eggs until smooth.
  5. Stir in the dry ingredients gradually until just combined.
  6. Wrap the dough in plastic wrap and refrigerate for at least one hour.
  7. Roll out the dough on a floured surface to about 1/4 inch thick, then cut into shapes.
  8. Place the cookies on a parchment-lined baking sheet and bake for 8-10 minutes.
  9. Cool the cookies on a wire rack and decorate as desired.
