Preparation
- Preheat your oven to 350°F (175°C). Prepare a 9×9-inch baking pan by lining it with parchment paper.
- Combine ½ cup of chocolate chips with the vegetable oil in a microwave-safe bowl and microwave until smooth.
- In a stand mixer bowl, combine granulated sugar, light brown sugar, eggs, vanilla, and peppermint extract. Beat on high until thick and airy.
- Pour the cooled melted chocolate into the egg mixture, mixing gently until just combined.
- Whisk together flour, cocoa powder, and salt in a separate bowl.
- Add the flour mixture to the chocolate batter, mixing on low until just combined.
- Gently fold in ½ cup of chocolate chips.
- Pour the brownie batter into the lined pan and sprinkle with remaining chocolate chips.
- Bake for 30-35 minutes until set and a toothpick comes out with a few moist crumbs.
- Immediately sprinkle crushed peppermint candies on top after removing from oven.
- Allow to cool completely in the pan before cutting into squares.
