  • 2 cups fresh basil leaves the star of this dish, providing an aromatic burst of flavor
  • 1/4 cup pine nuts lightly toasted for a rich, nutty depth
  • 2 cloves garlic minced for that essential zing
  • 1/2 cup Parmesan cheese freshly grated for taste and creaminess
  • 1/2 cup extra virgin olive oil drizzled in to bring everything together
For the Pasta
  • 12 ounces pasta of choice spaghetti or fusilli works beautifully

Method
 

Preparation
  1. Combine the fresh basil leaves, lightly toasted pine nuts, minced garlic, and freshly grated Parmesan cheese in your food processor. Pulse until coarsely chopped.
  2. With your processor running, slowly add the extra virgin olive oil to the mixture. Process until smooth yet slightly chunky.
  3. In a large pot, bring salted water to a rolling boil. Cook the pasta according to package instructions until al dente. Drain, reserving 1/2 cup of pasta water.
  4. Add the hot pasta to your vibrant pesto. Stir until well combined, adding reserved pasta water as needed.
  5. Serve the pesto pasta on plates and sprinkle with additional grated Parmesan if desired. Enjoy!
