  • 1 cup Long-grain white rice Rinsed
For the Coconut Base
  • 1 can Full-fat coconut milk
  • 1 cup Water or vegetable broth
For the Protein Boost
  • 1 can Red kidney beans Drained and rinsed
For the Flavor
  • 2 sprigs Fresh thyme
  • 3 stalks Scallions Chopped; reserve some for garnish
  • 2 cloves Garlic Minced
  • 1 tsp Allspice powder
  • 1 tsp Salt
  • 1/2 tsp Black pepper

How to Make Jamaican Rice and Peas
  1. Rinse the rice in cold water until it runs clear.
  2. Combine the coconut milk, water or broth, allspice, thyme, garlic, and half of the scallions in a large pot. Bring to a gentle simmer.
  3. Stir in the rinsed rice and drained kidney beans until well combined. Cover with a lid.
  4. Reduce the heat to low and let simmer for 20-25 minutes.
  5. Remove from heat and let sit, covered, for an additional 5 minutes. Fluff the rice gently with a fork and garnish with remaining scallions.
