How to Make Jamaican Rice and Peas
- Rinse the rice in cold water until it runs clear.
- Combine the coconut milk, water or broth, allspice, thyme, garlic, and half of the scallions in a large pot. Bring to a gentle simmer.
- Stir in the rinsed rice and drained kidney beans until well combined. Cover with a lid.
- Reduce the heat to low and let simmer for 20-25 minutes.
- Remove from heat and let sit, covered, for an additional 5 minutes. Fluff the rice gently with a fork and garnish with remaining scallions.
