Instructions
  1. Start by chopping your yellow onion and bell peppers into small pieces, and mince the garlic.
  2. In a large skillet, heat the extra virgin olive oil over medium heat. Once hot, add the chopped onion and bell peppers, sautéing until they become soft and translucent, about 5 minutes.
  3. Toss in the minced garlic and cook for an additional minute.
  4. Push the sautéed vegetables aside and add the lean ground turkey to the skillet. Break it apart as it cooks, simmering until it's browned and fully cooked, around 7–10 minutes.
  5. Sprinkle in the cumin, paprika, oregano, salt, and pepper. Stir well to combine all the flavors.
  6. Remove the skillet from heat and fold in the chopped cilantro or parsley.
