- Start by chopping your yellow onion and bell peppers into small pieces, and mince the garlic.
- In a large skillet, heat the extra virgin olive oil over medium heat. Once hot, add the chopped onion and bell peppers, sautéing until they become soft and translucent, about 5 minutes.
- Toss in the minced garlic and cook for an additional minute.
- Push the sautéed vegetables aside and add the lean ground turkey to the skillet. Break it apart as it cooks, simmering until it's browned and fully cooked, around 7–10 minutes.
- Sprinkle in the cumin, paprika, oregano, salt, and pepper. Stir well to combine all the flavors.
- Remove the skillet from heat and fold in the chopped cilantro or parsley.
