  • 2 cups All-purpose flour
  • 3/4 cup Cocoa powder use high-quality
  • 2 cups Granulated sugar
  • 1 tbsp Baking powder
  • 1 tsp Baking soda
  • 1 tsp Salt
  • 4 large Eggs free-range recommended
  • 1 cup Unsalted butter softened
  • 1 cup Buttermilk substitute with milk and vinegar if needed
For the Frosting
  • 4 large Egg yolks
  • 1 cup Evaporated milk
  • 1/2 cup Additional unsalted butter
  • 1 cup Granulated sugar
  • 2 cups Coconut flakes
  • 1 cup Chopped pecans

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease two round baking pans.
  2. Whisk together the flour, cocoa powder, baking powder, baking soda, and salt in a bowl.
  3. Cream the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well and then fold in the vanilla extract.
  4. Gradually add the buttermilk, stirring until the batter is smooth and creamy.
  5. Divide the batter evenly between the prepared pans and bake for 30-35 minutes until a toothpick comes out clean.
Frosting
  1. In a saucepan, cook the egg yolks and evaporated milk on low heat until thickened.
  2. Stir in the butter, sugar, coconut flakes, and chopped pecans until combined.
  3. Spread the frosting generously between layers and on top of the cooled cakes.
