How to Make Melting Potatoes
  1. Preheat your oven to 425°F (220°C) and lightly coat an oven-safe dish with cooking spray or butter.
  2. In a skillet, melt 4 tablespoons of unsalted butter over medium heat. Add minced garlic and fresh thyme leaves, sautéing for about 1 minute.
  3. Carefully arrange the potato wedges in the skillet. Pour in 1 cup of chicken or vegetable stock, then season generously with sea salt and black pepper.
