How to Make Tortellini Soup
  1. In a large pot, warm the olive oil over medium heat.
  2. Add chopped onions and carrots to the oil and sauté for about 5 minutes until tender.
  3. Stir in minced garlic and let it cook for another minute until aromatic.
  4. Carefully add the vegetable broth and bring the mixture to a gentle boil. Season with salt and pepper.
  5. Introduce the tortellini into the pot and cook according to package instructions (5-7 minutes).
  6. In the last minute of cooking, gently fold in the spinach until wilted.
  7. Ladle the soup into bowls and sprinkle with grated Parmesan cheese.
