- Preheat your oven to 350°F (175°C) and line muffin tins with cupcake liners.
- In a large mixing bowl, combine vegetable oil, granulated sugar, and vanilla extract. Mix until smooth.
- Add all-purpose flour, cocoa powder, baking soda, baking powder, and kosher salt to the wet mixture and mix until combined.
- Gently fold in shredded zucchini, chocolate chunks, and peanut butter chips.
- Scoop about 3 tablespoons of batter into each muffin liner, filling them about three-quarters full. Top with extra chocolate and peanut butter chips if desired.
- Bake for 25-30 minutes, checking for doneness with a toothpick.
- Allow muffins to cool in the pans for about 5 minutes, then transfer to a wire rack.
