Method
 

Directions
  1. Preheat your oven to 350°F (175°C) for even baking.
  2. Line a 9×9-inch baking pan with parchment paper, allowing overhang.
  3. In a microwave-safe bowl, combine 1/2 cup chocolate chips and vegetable oil. Microwave in intervals until smooth.
  4. Beat granulated sugar, brown sugar, eggs, vanilla, and peppermint extract in stand mixer for 5-6 minutes.
  5. With the mixer on low, gradually add the melted chocolate to the wet ingredients.
  6. In a separate bowl, whisk together flour, cocoa powder, and salt.
  7. Gradually add dry ingredients to the wet mix, mixing just until combined.
  8. Fold in remaining 1/2 cup chocolate chips.
  9. Pour batter into prepared pan, smoothing the top. Sprinkle remaining chocolate chips on top.
  10. Bake for 30-35 minutes, until a toothpick comes out with moist crumbs.
  11. Sprinkle crushed peppermint candies over brownies immediately after baking. Cool completely.
  12. Lift brownies out using parchment overhang, cut into squares, and enjoy!
